Because AI doesn't have eyes, it needs artists (photographers, actors and 3D modellers) to have already perceived and rendered something first in order for it to work. That rendering labor is re-used in AI images, un-credited and unpaid labor by design. Use the labor, but abandon the laborer. That's the point.
